El Guineal is a region of Peru particularly suitable for the cultivation of coffee because of its sandy soil and its favorable climate. It is here where Mrs. Anelida Gonzales, her husband and their 2 children cultivate their coffee in the respect of their natural resources.
The Flor de Caf plantation is surrounded by natural forests that allow for a prolonged fermentation process and thus the slow development of the microorganisms involved in the development of the coffee’s aromas.
Controlling the fermentation process is key for the producers. If befoe the Silva family was producing coffees with a cup profile of 80 points, the results obtained today are higher than 83 points thanks to a better control of the fermentation and drying time. This allows the Silva
family to sell their coffees at a better price and to invest again in their plantation.
