The processing of Sumatran (Island in Indonesia) coffee is extraordinary. Differentiating from the internationally known fully-washed-process, farmers in Sumatra process the coffee beans with a method, called wet-hulling or “giling basah”. The distinctive bluish colour in the green bean stage, makes this a unique coffee only gathered in this area of the world.
